Black Garlic
Birriwa Homestead black garlic is grown under certified biodynamic horticulture farming practices. It is watered and fertigated using Birriwa Mineral water.
Once the garlic is harvested we ferment it for several weeks in a controlled environment of low heat and high humidity creating a unique culinary ingredient, which is honey sweet in flavour and tastes like a cross between soy sauce and balsamic.
"Liquorice meets balsamic meets the absolute essence of garlic”. Reminiscent also of molasses and tamarind, it gives an unexpected depth of flavour to dishes from risottos to salads, and from purées to pizzas. Originating in South Korea this savoury Umami taste is a favourite with chefs’ worldwide.

Rojo de Castro is a spicey full flavoured creole hard neck garlic. It is preserved in Apple Cider Vinegar and can be used over many months. Good for using in a garlic crusher over pasta dishes, saladas, lamb, beef and vetetables.

Our new season garlic is certified biodynamic. When in season it is sold as a Creole Spanish Garlic and Australian White. Birriwa Mineral Water is used to fertigate the crop.

The Bulbils are harvested from our creole hardneck garlic. They are like mini garlic cloves and are a genetic clone of the mother plant. Bulbils are great to spinkle into a pasta dish or across a salad. They last for several months
